Marinated Halloumi & Mint

Serves:

Sevres 4 as a starter

Ingredients

  • 2 Aubergines

  • 500g Halloumi

  • Bunch of Mint

  • 2 Garlic Cloves (minced)

  • 2 Tbsp Soy Sauce

  • 6 Tbsp Balsamic Vinegar

  • 8Tbsp Olive Oil

Preparation

Step 1


Mix the marinade together including the Soy Sauce, Balsamic Vinegar, Olive Oil & Garlic. Slice the Aubergines into slices about 5mm thick and marinate them for about an hour in the fridge.



Step 2


Either on a BBQ or a grill pan griddle the Aubergine slices and slices of Halloumi brushed with Olive Oil for about 5 minutes turning frequently until golden.



Step 3

Stach the Aubergine and the Halloumi on a dish, drizzle some of the marinade over them then sprinkle with chopped fresh mint.
