Ingredients
118g unsalted butter
150g sugar
1 egg
1-2tbsp lemon juice
1-2 tbsp lemon zest
half a tsp vanilla (you can use a vanilla pod or essence)
half a tsp baking powder
quarter tsp baking soda
quarter tsp salt
158g flour
Preparation
Step 1
Preheat oven to 350f (175c)
Cream togethre the butter & sugar. Add the egg, zest, juice and vanilla.
Step 2
Sift in the flour, baking soda, baking powder and salt. Mix until all combined.
Step 3
Line a baking sheet with parchment baking paper and drop teaspoons of the mixture onto the baking sheet with space inbetween.
Step 4
Bake for 10-15 minutes until lightly golden brown. Leave to cool.
